About Us

From a home kitchen
to a modern bakery

NORS began in a small Zürich kitchen, where Danish founder Bianca started baking cinnamon rolls for friends, markets, and pop-ups. At the time, she was still working in the tech world as a business developer in IT – but the pull toward creating something of her own kept growing. Baking became a way to unfold her creative energy, work with her hands, and connect more deeply with the local community and environment.

What began as a passion project under the name White Rabbit Bakery soon became something bigger – and in 2025, it found a new name and a permanent home.

Inspired by the word “Norse” – the language and culture that shaped Scandinavia – NORS reflects everything we stand for: simplicity, honesty, craftsmanship, and beauty in the everyday.

Rooted in Scandinavian baking traditions and shaped by modern values, our menu focuses on timeless classics like cinnamon rolls and cardamom buns – all handmade, and always 100% plant-based.

More than
a bakery

We’re slowly finding our space in Zürich’s evolving lifestyle scene – which means we’re always testing new products and staying flexible, moving with our customers as their habits and needs shift throughout the week and seasons.

Right now, we’re developing sourdough bread, savory options, and nourishing add-ons like healthy overnight oats on weekends. We’re also exploring lighter, more wholesome products to complement our core selection.

When the weather allows, we open our sunny terrace for brunch and casual outdoor gatherings. In summer, we’ll be hosting small events – designed to bring people together over good food, conversation, and community.

We bake with intention – using organic Swiss flour, small-scale methods, and ingredients you can trust. Our bakery is fully plant-based, not just by principle, but by passion.

All pastries are made fresh each morning in our open production space, where you can see the process, smell the spices, and take a moment to slow down.

NORS is a place to pause, enjoy something real, and connect – with good food, good coffee, and good company.
